Ingredients
- 1 tbsp olive oil
- 1 brown onion, diced
- 3 cloves garlic, crushed
- 1 tbsp fresh ginger, grated
- 1 tsp turmeric
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 litre chicken bone broth or stock
- 2 cups shredded cooked chicken
- 2 handfuls baby spinach or kale
- Salt and pepper to taste
- Optional: squeeze of lemon before serving
Method
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft.
- Stir in garlic, ginger, and turmeric for 1 minute until fragrant.
- Add carrots, celery, zucchini, and broth.
- Simmer for 20 minutes until vegetables are tender.
- Stir in chicken and spinach until warmed through.
- Season to taste and finish with lemon if desired.
Serve warm with crusty bread or enjoy on its own.
